Ingredients:

Rolls:

  • Rice paper wrapper
  • Pork belly (preferred)
  • Thin rice noodles
  • Lettuce
  • Shrimp
  • Cilantro
  • Basil
  • Chives
  • Mint
  • Perilla.

Feel free to replace the herbs and veggies with other herbs and veggies.

Sauce ingredients:

  • Hoisin sauce
  • Sweetened creamy peanut butter
  • 1 clove of garlic
  • Optional: fried shallots, roasted peanuts

Instructions:

Preparation:
Shrimp:

  1. Defrost your shrimp by soaking it in lukewarm water. (Skip if not frozen)
  2. Remove the shrimp's shell, if there's any. Make sure to devein the shrimp.
  3. Lay the shrimp flat on a cutting board and slice the shrimp in half.

Pork:

  1. Wash the pork belly in the water and pat it dry.

All veggies:

  1. Remove the leaves from the stems.
  2. Fill a bowl with cold water and a pinch of salt.
  3. Add all veggies in to wash, then soak for 3 minutes.
  4. Repeat steps 1-3.
  5. Dry veggies in a colander/strainer.

Cook the proteins:

  1. Boil both pork and shrimp in separate pots.
  2. When the pork is cooked, slice it into thin pieces.

Cook the noodles:

  1. Boil a pot of water and cook the rice noodles for 10 minutes or until al dente. Stir every 3 minutes to prevent sticking.
  2. When cooked, drain the water and run the noodles under cold water until cool. Let it dry.

Make the sauce:

  1. We will need: 1 tablespoon of oil of choice, 1 clove garlic (Minced), 1 cup of water, 1/4 cup of hoisin sauce, 1/2 cup of sweetened creamy peanut butter, and Sriracha (optional).
  2. In a small pot, heat oil on medium-high. Add garlic and sauté until it turns color.
  3. Add water, hoisin sauce, and peanut butter. Whisk until smooth. simmer on low for one minute then remove from heat.
  4. Transfer to sauce bowl, top with a sprinkle of roasted peanuts, fried shallot, and Sriracha

How to wrap the rolls:

  1. Organize your ingredients close to you. Keep the proteins and a bowl of lukewarm water closest to you. Then noodles and veggies are behind them. Also, an empty plate for you to roll.
  2. Dip rice paper into the water until the entire surface is wet.
  3. Place the rice paper on the empty plate. Lay the veggies on the part of rice paper closest to you.
  4. Grab a little bit of noodles and place them on top of the veggies. Place the proteins above the veggies (should be in the middle of the rice paper).
  5. Wrap the rice paper like a burrito. Fold the left and right sides of the rice paper toward the middle. Bring the bottom (corner closest to you) to the middle and begin rolling tightly, pressing down firmly with each roll.
