Ingredients:

  1. 1/2 cup - Chickpea flour (besan)
  2. A little water
  3. 1/2 cup or more coarsely or finely chopped cauliflower
  4. Salt as needed
  5. Black pepper as needed
  6. 1/4 teaspoon garam masala (Indian spice mix)
  7. A pinch of red pepper or green chilies per taste to make it spicy (optional)

Instructions:

  • Chop cauliflower into coarse (under 1/8 inch pieces) or fine pieces using a food processor or using a knife.
  • Combine Chickpea flour (besan) and water and make a slightly loose mixture (like pancake batter maybe).
  • Add little water at a time and ensure the lumps are gone.
  • Add the cauliflower and the spices.
  • Taste the mixture and adjust salt and spices as per taste.
  • On a flat non stick frying pan, add olive or other oil.
  • Once oil is warm, add 2 tablespoons or more of batter and smooth it out with a spoon. 
  • Let it set and cook on medium heat.
  • Flip once the first side is cooked and light brown(ensure it does not burn by checking it on the edges).
  • Press with spatula to ensure the second flipped site touches the pan to cook evenly.
  • Remove from the pan when light brown on the second side.Enjoy with Ketchup or a home made chutney.

* Variations - replace cauliflower with chopped onion and tomatoes or another vegetable on hand.
