Ingredients:

  • 2 Tablespoons of Vegetable Oil
  • 1 Medium Onion
  • 1.5 Tablespoons Fresh Ground Garlic
  • 1.5 Tablespoons Fresh Ground Ginger
  • Spices to taste:
    • Salt
    • Red Cayenne Pepper
    • Cumin
    • Ground Coriander
    • Turmeric
  • 3/4 Cup Ground Tomatoes
  • Skinless Chicken Thighs and Drumsticks (dark meat works best)

Instructions:

  1. Grind onion in food processor and add to pan with vegetable oil on medium-high heat. Cook until onions start to turn brown.
  2. Add freshly ground garlic and ginger. Cook for approx. 3 min
  3. Add spices. Cook till aromatic, deglaze pan w water if needed
  4. Add tomatoes. Cook until color deepens.
  5. Add chicken. Brown for about 5 minutes. Cover pan and lower heat and cook for about 10-15 minutes until done.

This recipe can be modified. Add additional spices like cinnamon sticks or cloves or finish the curry with heavy cream. Or skip the chicken and add vegetables for veg curry.
