Ingredients:

  • 1 no. 303 can red, tart cherries
  • 2/3 cup Sugar
  • 1 tbsp. Cornstarch
  • 8 drops red food coloring
  • 1 pkg. Golden Yellow Cake Mix
  • 1/2 cup Milk
  • whipped cream
  • 1 egg
  • Butter

Note: You can use pie filling in place of the cherries, sugar, cornstarch, and food coloring. 

Instructions:

  1. Cook cherries, sugar, cornstarch, red food coloring over medium heat until thickened.
  2. Cool and pour into 9 inch square pan.
  3. Blend cake mix with milk until smooth, about 1 minute.  
  4. Drop 9 rounded tablespoons full onto cherries.
  5. Bake at 425 for 25 minutes until deep golden brown.
  6. Serve warm with whipped cream.
  7. Blend 1 egg into remaining batter and bake 6 – 8 muffins at 375 for 15 minutes). Serve warm with butter.

Personal Story

Beatrice "Bea" Wolf passed away at 97 in 2016. She grew up during the Great Depression. Her mother (see notes below) was born in Russia and crossed that country in a covered wagon to secure passage on a ship to Ellis Island.                

Note: The anti-Semitic violence of the Russian pogroms drove millions of Jews out of the Russian Empire. The word pogrom literally means "riot" in Russian. Commonly, the term describes the semi-official persecution of Jews in the Russian Empire that began in the early 1880s. With their situation in Russia basically hopeless, many Jewish families left, the vast majority intent on reaching America. Ultimately nearly two million people emigrated.
